Scones

Now that Spring is well underway, soon it will be warm enough for afternoon tea out in the sunshine (and until then, we can enjoy it inside!) so scones are an absolute must.

These are officially the best and most delicious scones you will ever eat.

They must also, from this moment on, be the only scones you consume at home, but anyhow, you will never be able to eat shop bought ones again.  The combination of good ingredients with no dodgy sneaky additives, the fact that they are made by your own bare hands, take mere minutes to knock up and fill your house with a glorious bake-y smell, make these the perfect afternoon snack.

To serve 4

12oz/300g plain flour
4.5tsp baking powder
1.5oz/35g sugar
3oz/75g butter
1 egg, beaten
10tbsp milk
0.5 tbsp lemon juice

Place the flour, sugar and baking powder in a bowl and add the butter.  Rub the butter into the flour until you have a bread-crumb sort of texture.










Add the milk, egg and lemon juice and stir with a butter knife until the dough just comes together (add more milk if it's a bit dry).  Don't over work the dough - the less you touch it/knead it, the better.




Turn the dough out onto a lightly floured surface and press out gently to about an inch thick.  Cut rounds, place on a greased tray and brush with a little milk.



You can re-roll and cut a second lot with the leftover pieces, but don't re-roll again after that.  Make a little wonky scone with the last leftover bits (cook's perk!).



Bake for 12-15 mins at 190C.





Cool on a rack before eating with piles of butter cream and jam (in whichever order you think correct!)  I like to scoff the wonky scone hot with butter, delicious!
